TUNA SALAD
Everyone loves tuna salad, so prepare this SCD version for your family for a quick lunch at home, or to share with friends for a casual weekend meal. For variety, add other items such as chopped apples, grapes, greens, or nuts. - Pam

Ingredients

5 ounces (140 g) SCD-safe tuna, canned
6 tablespoons (85 g) Grandma’s Mayonnaise (p. 346)
1 teaspoon chives, chopped fine
½ tablespoon (8 mL) olive oil
salt and black pepper, optional

Instructions

1. Open the can and drain any excess moisture from the tuna
2. In a small mixing bowl, combine all the ingredients, including salt and pepper, and stir so that chives, mayonnaise, and oil are well blended
3. If you wanted to add salt and pepper, do that before you mix everything together
4. Do not use a blender, as the tuna will turn into a thick paste – please mix by hand in a bowl

Yield

5 ounces (140 g)
