BAKED SALMON
The onions and tomatoes around this salmon keep it moist through the baking process. You could also add in vegetables of your own choice such as sliced zucchini or mushrooms. Alternately, you may use a different kind of fish.

Ingredients

1½ tablespoons (22 mL) olive oil
5 cloves garlic, peeled and chopped fine
2 lemons, juiced
½ teaspoon ground cumin powder
¼ teaspoon ground clove powder
1 teaspoon chili powder
½ onion, peeled and chopped fine
2 large tomatoes, chopped
1 pound (440 g) wild salmon

Instructions

1. In an ovenproof baking pan, mix the olive oil, garlic, spices, and lemon to make a rub
2. Place the salmon in the dish and coat with the rub
3. Then add in the onions and tomatoes around fish
4. Bake the salmon for approximately 30 minutes at 350°F (180°C or gas mark 4) with a foil covering the dish
