FRUIT JELLO
Jello can be made with different fruit bases, and filled with a variety of options. Ours is a simple and fast recipe, one that can make those play dates a happy time for all. Alternately, set these in smaller cups for individual servings.

Ingredients

4 packets SCD-safe unflavored gelatin
4 cups (960 mL) SCD-safe unsweetened apple juice
1 ripe banana, peeled, seeded, and chopped fine
1 gala apple, peeled and chopped fine
2 clementines, peeled and chopped fine

Instructions

1. In a mixing bowl, sprinkle the gelatin from packets over 1 cup of cold apple juice
2. Meanwhile, in a small saucepan, heat up the other 3 cups of apple juice until it boils
3. Remove it from the stovetop, and mix it into the cold juice and gelatin mixture
4. Add in the chopped fruit, and pour the loose mixture into a 9-by-13-inch glass baking dish
5. Cover (with plastic wrap) and refrigerate until firm (approximately 3 hours)
6. Serve chilled, and store remaining jello in fridge

Yield

8-12 servings
