STRAWBERRY SPREAD
Use this strawberry spread rolled up inside SCD Crepes (p.191). You could also mix some of it up into a smoothie, or spoon it atop any of our SCD desserts.

Ingredients

1 pound (300 g) strawberries (organic preferred)
½ cup (170 g) honey
1 tablespoon (15 mL) water
½ teaspoon (2.5 mL) vanilla extract

Instructions

1. Wash the strawberries
2. Core the top leaves off (if any) and chop the strawberries into small pieces
3. On medium heat in a stovetop pan, heat the honey with water for 2-3 minutes
4. Add in the chopped strawberries and simmer them together on lower heat
5. Cover the pan so that excess moisture does not escape
6. Stir often, and allow the mixture to cook until strawberries become soft and are cooked through
7. Finally add in the vanilla extract and let it get absorbed If a smooth consistency is desired, pulse in a hand blender once cooled
8. Store in refrigerator for 2-4 by the stewing fruit
