MOM'S RASPBERRY-APPLESAUCE CAKE
This berry-infused cake has a beautiful, sweet, light texture. It can be a great option for a fancy tea party, or a casual children’s play date. 1 cup (240 mL) Homemade Applesauce (p. 340)

Ingredients

2 eggs
1 cup (123 g) raspberries
2 tablespoons (28 g) ghee
N cup (113 g) honey
3 cups (330 g) almond flour
1 teaspoon baking soda
J teaspoon cinnamon powder
½ teaspoon salt

Instructions

1. In a kitchen processor, add in the eggs, applesauce, raspberries, ghee, and honey until they are well blended
2. Next add in the almond flour, baking soda, cinnamon powder, and salt
3. However, if you do not want the raspberries blended into the cake, you can leave them out and stir them into the batter by hand at Pour the batter into a 9-by-13-inch baking dish
4. Place it in a 325°F (165°C or gas mark 3) oven for 45-60 minutes or until a knife comes out clean
