MARSHMALLOWS
These marshmallows come out fluffy yet solid (thanks to the gelatin), so they are easy to handle and can be eaten without mess. Great for serving at a kid’s party or on play dates.

Ingredients

2 packets SCD-approved unflavored gelatin
½ cup (120 mL) + N cup (80 mL) cold water
¾-1 cup (255-340 g) honey
3 egg whites
coconut flour for dusting

Instructions

1. Soften the gelatin in a ½ cup of the cold water
2. Meanwhile, in a small stove pan, over medium heat, pour in the N cup water and honey
3. Allow the honey to dissolve into the water and then remove from heat
4. Add the gelatin into this mixture until it dissolves as well
5. Let it cool down for 15-20 minutes
6. In separate bowl, beat the egg whites until stiff
7. Slowly add the gelatin-honey mixture into the egg- whites bowl and fold it in
8. Spread wax paper onto a 9-by-13 baking dish
9. Pour the mixture into it and place it in the refrigerator
10. Let it set for 2-3 hours, or until firm
11. Lastly, cut the set marshmallow into square pieces
12. Dust or dab the pieces lightly in the coconut flour (this will remove the stickiness)
13. Wrap individually in wax paper and store in fridge
14. Note: Separation of honey towards the bottom might occur after refrigeration
15. This is okay

Yield

20-25 squares
