FRUIT LEATHER, ASSORTED
These assorted fruit leather strips are a favorite in both the Prasad and Ferro households. Even those who do not follow the SCD cannot stop helping them- selves to these delicious snacks! - Raman & Pam

Ingredients

{a} 1 pound (300 g) strawberries
yield: 10-12 strips, 2-by-5-inches
{b} 3-4 apricots
2 tablespoons (30 mL) Homemade Applesauce (p. 340)
1 tablespoon (20 g) honey
yield: 7-10 strips, 1½-by-5-inches
{c} 4 tablespoons (60 mL) Homemade Applesauce (p. 340)
¾ cup (95 g) fresh raspberries,
¾ cup (110 g) fresh blueberries
yield: 10-12 strips, 2-by-5-inches

Instructions

1. Blend one group of ingredients in a small hand-held blender, and make sure they are mixed well
2. If the consistency is too thick, add a small amount of water (1-2 teaspoons)
3. Line a sheet-baking pan with parchment or a silicone liner
4. Pour the blended fruit into the pan until spread evenly
5. Set the oven to 170°F (or lowest setting) for approximately 6-9 hours
6. (You will probably need to adjust the heat and time depending on your specific home oven model
7. ) Leather should be firm and dry when you remove it
8. Cut it into strips and peel off
9. For easy access and storage, roll into strips of parchment paper and secure with string or tape
10. Store in an airtight container at room temperature for up to 10 days
