BALSAMIC-STYLE VINEGAR

Ingredients

1 cup red wine vinegar
1 1/2 cups sweet grape wine (make sure it's naturally sweet, with no added sugar, or add your own SCD-legal sweetener, e.g. honey, to dry SCD-legal wine)

Instructions

1. In a heavy saucepan, combine vinegar and wine.
2. Bring to a boil over high heat; reduce heat and cook until reduced to about 1/2 cup, approximately 30 minutes.
3. Transfer to jar.
4. Cool and store in refrigerator. Enjoy!
