TURKEY-APPLE PATTIES
The turkey burgers can be made alongside beef burgers at your annual summer cookout. Put them between two SCD bread pieces and smother them with Nonnie’s SCD Ketchup (p.353). Enjoy along with Sue’s Onion Rings (p.320)!

Ingredients

1 pound (440 g) ground turkey
1 small apple, cored, peeled, and grated
G cup (38 g) onion, peeled and chopped fine
2 tablespoons (20 g) fresh chives, chopped fine
J teaspoon black pepper
J teaspoon salt
J teaspoon cinnamon powder
1 egg for binding
1 tablespoon (15 mL) olive oil
oil for frying (olive or sunflower)

Instructions

1. In a bowl, combine all the ingredients together (except the oil for frying)
2. Using your hands, work the apples and onions into the turkey so that the turkey meat base is well proportioned
3. Make 2½-to-3-inches diameter patties and flatten
4. Set aside
5. In a (cast-iron) stovetop pan, heat the frying oil, and then add in the patties
6. Flip over and cook other side until done
7. Remove and set aside
8. Repeat this process until all patties are cooked through

Yield

12-15 patties, 2½-to-3-inches in diameter
