JAM DROP BISCUITS
These jam drop biscuits remind us of Victorian times and high tea in the English countryside. However, these scrumptious biscuits are made for the modern working couple that wants some sweetness with little effort. And the real treat is that they can be whipped up in less than 30 minutes!

Ingredients

Batter:
2 cups (220 g) cashew flour
G teaspoon baking soda
G teaspoon salt
G cup (55 g) ghee
2 tablespoons (40 g) honey
½ teaspoon cinnamon powder
Filling:
1 tablespoon (15 mL) Strawberry Spread (p.355)
½ tablespoon (7 mL) Homemade Applesauce (p.340)

Instructions

1. Blend the batter ingredients together
2. The dough should be firm
3. Meanwhile, stir together the jam and applesauce in a small bowl with a spoon
4. Set aside
5. On a greased baking pan, drop the biscuit batter at regular intervals
6. Press your finger into center of each biscuit so there is a slight dent–a little well that will be filled by jelly/jam
7. Drop the jam gently into each little well
8. Bake the biscuits for 10-15 minutes at 325° F (165°C or gas mark 3), or until done

12 biscuits
