3 small zucchini (1 lb.)
2 teaspoons olive oil
1. Preheat oven to 350 F
2. Cut zucchini into eighths lengthwise.
3. Toss zucchini spears in olive oil and arrange on baking sheet.
4. Sprinkle with parmesan cheese to taste.
5. Bake for 20 minutes, or until fork tender.
