VEGETABLE MARINADE
Ingredients
1-1/2 cups tomato juice
1/2 cup vinegar
2 tablespoons olive oil
2 cloves crushed garlic
Instructions
1. Marinade your favourite veggies for while in the mixture. I use broccoli, cauliflower, mushrooms, red and green pepper and carrots.
2. Bake in marinade in a casserole dish at 350 until desired tenderness.
