VEGAN PESTO [print]
Ingredients
1 1/2 cups cilantro
1/4 cup cashews 1 clove fresh garlic 10 fresh spinach leaves olive oil 1 lime (juice) salt black pepper Instructions
1. Put the cilantro, spinach and nuts into a food processor. Chop until fairly fine.
2. Add rest of ingredients and blend some more, until the mixture is the consistency of pesto. Notes
