GREEK ORANGE-YOGURT CAKE WITH HONEY SYRUP [print]
Ingredients
CAKE
3 1/2 cups almond flour 3 eggs (separated and whip the whites) 1 1/2 teaspoons baking soda 1 1/2 cups honey 1 cup yogurt 1/2 cup blanched almonds, coarsely chopped 4 tablespoons frozen orange juice concentrate 1 tablespoon fresh orange zest 1/2 cup butter SYRUP 1 1/2 cups honey 1 1/2 cups orange juice Instructions
1. Preheat oven to 350 degrees F.
2. Sift together almond flour and baking soda. 3. Stir honey, yoghurt, almonds, OJ concentrate, and orange zest into dry ingredients. 4. Pour batter into a well-greased 9 inch x 13 inch baking pan. Bake until top is golden (about 45 min). 5. To make the syrup, bring 1 1/2 cups honey and 1 1/2 cups OJ to a boil in a saucepan. 6. Reduce heat and simmer for 5 min. 7. Remove and discard any froth that may form on the syrup's surface. 8. Pour syrup over finished cake. 9. Poke cake gently with a toothpick to help cake absorb syrup. 10. Serve when cake is cool and syrup has been absorbed. 11. For a lively presentation, encircle cake with orange slice halves and sprigs of fresh mint. Sprinkle the cake's top with toasted almond slivers. Notes
