PEACHY SCALLOPS [print]
Ingredients
1 peach, peeled and sectioned
3-4 large scallops 2 cloves garlic, minced 1/3 sweet red pepper cut in chunks 1 tablespoon butter salt and pepper to taste white wine Instructions
1. Heat a medium skillet, add butter.
2. Saute garlic and red pepper five minutes. 3. Add scallops and brown on both sides. 4. Add peaches, stirring well. 5. Add a splash of white wine. 6. Add salt and pepper last. 7. Notes
Serve with a side garnish of field greens and pour pan juices over.
