CHEESEY EGG CASSEROLE [print]
Ingredients
4 eggs, beaten
1 cup farmer's cheese or dry curd cottage cheese 2 cups monterey jack cheese, shredded 4 ounce chopped green chiles 1 4-ounce jar pimientos 1 green pepper 1/4 teaspoon salt 1/4 cup butter, melted Instructions
1. Combine salt, and butter in large bowl.
2. Add eggs, farmer's cheese, chilies, pimiento and cheese; mix well. 3. Pour mixture into a lightly greased 10 x 6 x 2 inch baking dish. 4. Garnish casserole with green pepper. 5. Bake, uncovered, at 375 F (200 C) for 30 minutes.
