Raman Prasad was first diagnosed with ulcerative colitis at the age of seventeen. His health steadily deteriorated in the years that followed, resulting in several hospital stays and various health complications. It was during this time that he came across Elaine Gottschall's book, Breaking the Vicious Cycle, which outlined the Specific Carbohydrate Diet (SCD) and the science behind it for putting inflammatory bowel disease (IBD), celiac disease, and diverticulitis in remission.

Raman has followed the SCD successfully for more than ten years with the help of his wife, co-author Niloufer Moochhala, which has resulted in a happy return to good health and a normal life. Inspired by his recovery, the couple created an online recipe database for the SCD community and established www.scdrecipe.com in 1998. Over the past decade, the website has grown to include more than 500 recipes, as well as other relevant information about the diet.

Raised in North Haven, Connecticut, Raman (who is of Indian and Italian-American heritage), is also the author of the self-published memoir Colitis & Me: A Story of Recovery and the SCD cookbook Adventures in the Family Kitchen, which combines traditional Italian-American and Indian recipes from the couple's respective families (Niloufer was born and raised in Mumbai, India).

Together, the two have traveled widely in an effort to create a global kitchen within the SCD repertoire. From indulging in chicken curry in the ancient Indian city of Udaipur to feasting on Spanish tapas in old Barcelona, their mission has been to taste and re-create SCD-safe recipes offered by other cultures and traditions and thereby expand the diversity of the diet.
