Turtle Soup Cookbook, Recipes from an SCD Mom

image 1Just in time for holiday cooking, Beth Spencer has written Turtle Soup: Recipes for the Specific Carbohydrate Diet from an SCD Mom. Tonight my copy of Turtle Soup officially earned its place in the kitchen, with a touch of muffin batter "breaking in" one of the pages. (It's obvious which of my cookbooks are well-used:) I appreciated the care with which Beth wrote the recipes as well as the valuable SCD cooking tips--such as working with almond flour.

One of the nice parts of this cookbook (and appropriate for the holidays) is Beth's motivation. She started the diet to be an "SCD buddy" for her daughter Amy, who was suffering from Crohn's disease. Included in the book are excerpts from their 2007-2008 blogs including starting out on the diet and Amy's experience of following the SCD while pregnant.

If you have a chance, please take a look. (The pizza and pie crusts alone make it worthwhile:)

Side Note: Amy, Beth's daughter started the SCD after talking to a family who has used the SCD for many years. A similar scenario happened with Tucker Sweeney who is mentioned in the previous post. He talked to a family friend with extensive SCD experience.
